Gingered Carrot Soup: A delicious mind-boosting soup from “Heal Your Heart”

What you need
2 medium onions, sliced
2 cloves garlic, coarsely chopped
2 tablespoons dark brown sugar
1-1/2 pounds carrots, sliced
1 teaspoon ground ginger
1/4 teaspoon ground turmeric
5 cups vegetable stock
1/2 teaspoon Himalayan pink salt
2 tablespoons chopped fresh cilantro (optional)In a large pot, heat the oil over medium heat. Add the onions, garlic and brown sugar. Stir to combine. Reduce heat to med-low and cook for 12 min, or until lightly browned. Add the carrots, ginger, turmeric, and vegetable stock and salt. Cover the pot and cook for 10 min or until vegetables are tender. Garnish with cilantro as needed.
